- Melt butter in a medium saucepan over medium heat and bring to a boil. Once it boils, stir constantly until the oil turns from foam to a dark amber color. Remove from heat and let cool for 20 minutes.
- Preheat oven to 350 degrees Fahrenheit while oil cools.
- Add light brown sugar, granulated sugar, eggs, vanilla, baking soda, sea salt, and chilled melted butter to a large bowl and stir to combine.
- Mix the flour to form a dough, then add the dark chocolate pieces.
- Using a tablespoon or ice cream scoop, transfer the batter to a baking sheet, spacing each scoop about 2 inches apart.
- Sprinkle each piece of dough with Maldon Flake Sea Salt, then refrigerate for about 15 minutes before baking.
- Bake the cookies for about 10-12 minutes at 350 degrees Fahrenheit, or until the center of each cookie is set and the edges are lightly golden.
- After baking, remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
